Refreshing Mojito Recipe

In honor of our Carribean Chic Wish Upon a Wedding Launch party tonight let me introduce you to the raspberry mojito.

Did your mouth just go dry?  Good… because this drink is worth mixing up on a warm summer day to quench your thirst.  Who can resist fresh raspberries and a refreshing mint drink on a day where the weather (and humidity) is way beyond cool?!  To me this is the to die for combination.  Mint + Raspberries = pure happiness.

Raspberry Mojito
Makes 1 serving

8 fresh mint leaves
1/2 ounce freshly squeezed lime juice
1 teaspoon superfine sugar
2 ounces white rum
2-3 ounces seltzer
4-6 fresh raspberries

– Place mint leaves, lime juice and sugar in a highball glass and use the straight end of a wooden spoon to gently press on  leaves to release the flavor.

– Fill glass with ice cubes. Pour in rum. Top off with seltzer. Drop in raspberries, and sip!

Look out summer margaritas, this raspberry mojito just may take your place!
